Good Morning Berry Pancakes

Pancake Day should be every day… and with these little gems in your repertoire there’s no reason why it can’t be! Don’t stop at mornings, eat them anytime – they’re divine!

Prep Time: 10 minutes

Cook time: 20 minutes

Serves: 4

Ingredients

1 ½ cups cups self-raising flour
1 tsp baking powder
2 tbsp caster sugar
2 eggs, lightly beaten
1 cup milk
60g butter or margarine, melted but not hot
1 cup frozen blackberries

 

Instructions

Sift together the flour and baking powder and add the sugar. Make a well in the middle. Mix together the eggs, milk and melted butter and pour into the flour mixture, whisking as you go to form a smooth batter.

When you are ready to start cooking your pancakes, stir the berries through your batter. If your batter appears a little stiff, you can loosen it up with a touch more milk.

Put a frying pan on a medium heat and melt a small knob of butter. I use a ¼ cup measurement to pour my pancakes into the pan.

Cook over  a low to medium heat for about a minute until bubbles burst on the top and the bottom is golden brown, then flip and cook for a further minute. Put them on a plate and keep them warm.

To Serve: Place two golden, sweet-smelling pancakes in the middle of your plate, top with fresh fruit, and drizzle with honey or maple syrup.
