Mini Cheese and Onion Marmalade Savouries

Don’t you just hate it when you get the half-eaten cheese platter conundrum! Really expensive cheese that you can’t re-serve and don’t want to throw out.

Well this quick and easy recipe will solve all those problems and make you smile from the inside! The great thing is, a small amount of cheese & a spoonful of relish goes a hellova long way. 15 minutes to cheese platter heaven!!!

Serves: 10

Ingredients

5 sheets filo pastry
2 tbsp butter, melted
3 eggs, lightly beaten
120g assorted cheese, diced (great to use left over cheese & relish from platter)
100ml cream
Salt and white pepper
¼ cup onion marmalade

Instructions

Lightly grease a muffin tin. Preheat oven to 180.

Take a sheet of pastry, fold and cut in half. Fold into quarters and cut again.

Take a piece of pastry, paint with melted butter and fit into a muffin tin. Take a 2nd sheet and place on top, push right into the base of the first sheet, making a little cup.

Repeat with remaining pastry and butter until the muffin tin is full.

Sprinkle your cheese into the pastry bases, try and get a little selection in each.

Beat together eggs and cream, season with a little salt and white pepper and pour over the cheese.

Place half a spoonful of onion marmalade on to each savoury and pop in the oven. Use any left over butter to paint the pastry edges.

Bake until puffy and golden brown, eat immediately.
