The Best Tomato Sauce

For when you have an abundance of tomatoes (seasonal) or you want the best base for your pasta dish or pizza topping, this sauce is the queen when it comes to tomato excellence.  Take your time, add the love in the stirring and it will all come back on the palate – trust me.

Prep Time: 5 mins

Cook time: 25 min

Serves: 500ml

Ingredients

4 tbsp olive oil
2 onions, finely chopped
4 cloves garlic
pinch chilli flakes
1/4 cup fresh oregano leaves, roughly chopped
2 x 400g crushed tomatoes OR
1kg fresh tomatoes, skinned (see Hax)
140g tomato paste (mixed with 1/2 cup hot water)
salt and freshly ground black pepper

Instructions

Pour the oil in a medium sized frying pan.

Add the onions, garlic, chilli, and oregano, cook gently (without frying) until the onions are soft and golden in colour.

Add the tomatoes and paste.  Mix well.

This is a slow cook, don’t try to boil the flavour in, this is sexy food.

Simmer (lid off) for 20 minutes or until your sauce is thick and jammy. Taste. Season, taste again.
