Chocolate Spice, Banana & Nuts Pinwheels

These pinwheels will spin YOUR wheels.  For breakfast, morning / afternoon tea.  Finish to a decadent dinner party treat with cream or just because you want something indulgent to tuck into, in front of the TV with your slippers on.  Sweet, sticky and moreish, just like me……. hahahahaha!

Serves: 12 (or 1 lucky baker)

Ingredients

Buns
1/2 cup warm water
1 tbsp dried yeast (I use Edmonds)
1 tsp Jax Food Hax Sugar Spice Mash Up 1#
3 cups flour
1 tsp salt
1/2 cup canola oil
3/4 cup warm milk
1/4 cup vanilla essence

Topping
1/4 cup chopped nuts
1/4 cup caster sugar*
1/2 tsp ground cinnamon*

Filling
1 cup chocolate spread (like Nutella)
3 ripe bananas, sliced
1/2 cup chopped nuts*

Combine water, yeast and sugar, sit in a warm place for about 5 minutes until the mixture is frothing.

Pop the flour, salt and cinnamon in a large bowl, add the oil, milk, vanilla.  Combine then pour in the yeast mixture.  Bring together until a rough dough is formed.

Dust your bench with a little flour, pull the dough out and knead gently until you have a smooth shiny ball.  Wash and your bowl, dust with a little more flour and pop your dough back in.  Cover with a t-towel and leave overnight in a warm place to prove.

In the morning, your dough should be twice the size, smooth, yeasty and ready to rock and roll.

Preheat the oven to 200c, lightly grease a 12 cup muffin tray.

Place on a well-floured surface and push into a rough rectangle (just a little larger then an A4 sheet of paper).  Spread with chocolate spread, careful not to go too close to the edge (sometimes, if I have it, I give it a little squirt with Hershey’s chocolate sauce – just to make sure I’m getting my ChocFix) then cover with bananas and sprinkle with nuts.

From the longest side, gently roll into a sausage shape, then cut into 12 thick slices and and stand up in the muffin tins.  (If it helps to get even slices, cut in half then work your way into 12 slices)

If you’re not using my Sugar or Nut hax, mix together the nuts, sugar and cinnamon and sprinkle over the tops of the pinwheels.  Bake in the oven for 15 minutes or until you just CAN’T STAND IT ANY LONGER.

Serve hot with coffee or cream. or just……
