Anytime Jamaican Lemon & Ginger Loaf

There is nothing more delicious then a fresh slice of this loaf with a wedge of beautiful Cheddar or a spoonful of warm Crème Anglaise.  Traditionally, my family used to have a very basic version of it at Easter, but I suppose there is no reason to restrict yourself to special occasions.  The warm, spicy cinnamon and nutmeg aroma filling the house, reminds me of my childhood, back home in London.

Spicy Jamaican Chicken w Pineapple Salsa

If you haven’t been to Jamaica then this dish will deliver, sun, sea and a little spice all on one plate.  Chicken thighs marinated with the traditional Jerk marinade, will make you want to get up and limbo when all of these aromatic flavours hit your palate, allspice, nutmeg, cinnamon, garlic, ginger.  The pineapple salsa has the beautiful cooling effect, all in a light wrap.  Great for the BBQ, bach, picnic or just because.

Roasted Beetroot Salad

This is a great gluten free and vegetarian side. Loads of flavour, texture and colour.  One of my all time favourites, if you want a big salad lunch or a nice alternative for the BBQ.  Anyone who doesn’t like beetroot, will have a change of heart and tastebuds after a fork full.
