Spaghetti with Pork and Fennel Ragu

There are times in my kitchen when I have to do the ‘food‘ dance, which translates to ‘this meal is incredible’ and yes, this one always gets my hips moving.  Already incredible and full of flavour, add more fennel if you love the taste, but most importantly, this dish is was born to share.

Victoria Sandwich with Raspberry Vanilla Creme

I love a sponge and can’t really go past a slice of Victoria Sandwich.  These cakes can be found on the counters of most tea shops in and around the UK.  Served in wedges, sandwiched together with lashings of deep red raspberry jam and fluffy light cream, it is the perfect accompaniment to a cup of English Breakfast tea. For sponge perfection – take your time adding the eggs.

Louisiana Gumbo

Inspired by the Hot 8 Brass band from New Orleans, this authentic gumbo recipe really knocks your socks off.  Fresh vegetables wrapped around a thick spicy sauce, punctuated with sticky chicken, spicy sausage and the odd pop of a succulent prawn, is the perfect way to start an evening with friends or in front of the TV or just because you deserve it.

Mouth-wateringly sweet, sticky and calorific. If you are on a diet, this is not for you. But even if you are on a diet, you won’t be able to resist – sorry. The smell of coconut cooking is enough to drive me wild.

Salad Nicoise

There’s a very good reason why the French Salad Nicoise is a classic – It’s delicious!  I’m not a huge lover of potatoes, so mine is spud free.

Traditionally made with new potatoes, green beans and boiled eggs, if you’re watching your weight this is the perfect mix of protein and salad greens for you – Of course I’ve Jax’d it up a bit, but I’m sure you’ll agree it still a classic –  and I could always eat more!
