This is one of those simple dishes, that once it hits the heat of the oven and the aroma begins to waft around becomes a ‘is it ready yet’ intoxicating drama.  There’s always a burnt lip, mouth or tongue in my house!!

Some cakes are made to be drizzled with warm custard and this one is no exception.  Of course it’s also fab with custard and / or cream, it’s entirely up to you.  However the silky-ness of the custard paired with this warm, spicy and aromatic sponge is just heavenly.

Eek! I’m not much of a custard fan, BUT, in this soft and moist sponge, it. Is. Incredible. You can use precooked rhubarb if you like. However the fresh and roasted in my Hax butter is off the charts amaze-BALLS.

Raspberry Cheesecake Stack w Dark Choc Shard

I’m all about a fabulous, wow looking dessert but don’t get me wrong, I want to create it quickly so I can get my spoon and tuck in. ALSO, and this is the big thing, I don’t want it to travel straight from my lips to my hips, so if possible I’d like it to be low on carbs too!!

Too much to ask?  Not with this delectable light, airy and crispy creation.  Using wonton skins, the pastry is as light as a feather and also the chocolate content is only just enough, leaving you with that sweet taste and wanting more.
