Vegetarian Spring Rolls

For a lovely dinner party starter, canapés or a platter with friends, try one, two or all three of these easy Asian dishes. You can mix and match or play around with herbs and fillings.

Great to make in large batches and freeze too.

NB: You’ll find my recipe for Crispy Bottom Pork & Prawn Dumplings under ‘Starters and Canapes’, and the quick and delicious Prawn Balls recipe is in my latest book – Union Jax (P124) – If you don’t have a copy already, check out the Shop!

Coconut Slaw

Sometimes all you need is a little bit of this and a little bit of that to create what I consider ‘magic’ in a bowl and this recipe is all that!  It steps up the old and traditional into modern, tasty and moreish.   This is what I’m all about, packs a massive punch with flavour, colourful and goes with everything. Er, no love, not your new shoes!!!

Spring Vegetables w Feta & Salsa Verde

When the new buds start waking up, the clouds move away and the sun pokes out, this is a fantastic dish to help you ease into Spring.  Lovely fresh, baby veges, tossed in a chopped salsa verde sauce.  All those subtle flavours pulled together by the saltiness of the feta.  A great seasonal dish for brunch, lunch, dinner and always!

Roasted Beetroot Salad

This is a great gluten free and vegetarian side. Loads of flavour, texture and colour.  One of my all time favourites, if you want a big salad lunch or a nice alternative for the BBQ.  Anyone who doesn’t like beetroot, will have a change of heart and tastebuds after a fork full.

Roasted Pumpkin & Coconut Soup

This is the perfect example of an amalgamated Jax creation.  I never, ever ate pumpkin until I came to kiwi-land.  I don’t even remember seeing it for sale in my local supermarket, grocers or market.  However, it is sold in abundance here.  Of course you all know my favourite food is soup and I love anything spicy!  What more is there to say.  Oh yes, AND I love coconut.
